Let’s face it, when it comes to oats, most people only think of sweet recipes. But why limit ourselves to just that when they can make am absolute delicious savory oatmeal?
This is my go-to recipe when making savory oatmeal because it’s super easy to make and very cheap, it’s rare to find something that’s delicious, easy to make and budget friendly!
At $1 per portion it’s extremely cheap but chock-full of flavor.
Which comes from the umami-packed miso paste, and the support of the sesame sauce, bacon bits and scallions.
Savory Miso-Sesame Oatmeal
Ingredients
- 100g (1.1 cups) rolled oats
- 400ml (1.7 cups) water
- 1 tsp neutral cooking oil I use peanut
- 1 tbsp white miso paste
- 1 tsp soy sauce
- 1 tsp sesame oil
- 1 spring of scallion
- 50g (2 oz) uncured bacon
- 15 ml Sake or white one for deglazing
Instructions
- Start by chopping the scallion, we'll use most of the green part for plating so cut it at an angle to make it look nicer.Then cut the bacon into small pieces
- Move on to the stove, place the bacon in a medium-size sauce pan on medium heat.Cook it down until it turns crispy, then take it out but leave the rendered fat inside the pan.
- Add the scallions and a tsp of oil (only if your bacon didn't leave enough fat)Cook it down for about half a minute and then add two splashes of sake or white wine to deglaze the pan.Keep scraping with a spoon or silicone spatula until the pan is deglazed.
- Add the oats in the pot, mix them in and toast for 1 minute or until it starts to smell a bit nutty.Then add half of the water and stir it in. The oats need to cook for a total of 10 minutes, in this time you'll stir from time to time as the water cooks down and gets absorbed by the oats. 5 minutes in, or when you see it getting dryer, add the remaining water and keep cooking and stirring until it's done.
- After cooking the oats for 10 minutes take them off the flame and add the miso paste, soy sauce and sesame oil. Mix it in well and add a bit of the scallions.
- Plate it in a shallow bowl and top with the bacon bits, green parts of the scallions and an optional sprinkle of sesame seeds. Enjoy!
