This is how to perfectly bake through a sweet potato regardless of the size and how to elevate it’s flavor with an assortment of supporting ingredients combined together to create a delicious stuffing. Oh did I mention that there’s also a quick tip on making cheesy chips to top this goodness with? Yeah, it’s there.
Give these loaded twice baked sweet potatoes a try and feel free to adjust the filling ingredients however you’d like – I for one love to add a bit of feta cheese because it doesn’t melt completely and it offer a cheesy nugget surprise when eating them – couple that with the crispy bacon it’s a match made in heaven.

Bacon & Feta Cheese Twice-Baked Sweet Potatoes
Ingredients
- 2 large sweet potatoes
- 145 grams (5.5 oz) bacon
- 30 grams (1/2 cup) green onions
- 1 jalapeno pepper deseeded
- 50 grams (2 oz.) Feta cheese diced
- 50 grams (2 oz.) sharp cheddar cheese grated
- 2 tbsp. sour cream
- 1/2 tsp. paprika
- 1/2 tsp. garlic powder
- 1 tsp. oil for frying the bacon optional
Instructions
- First preheat your oven at 200°C / 400°F Wash the sweet potatoes very well, dry them up and then use a fork to poke holes all over them.Place them in an oven tray, coat them with some avocado oil and sprinkle with salt. In the preheated oven they for for 35-40min or until fork tender.
- While the potatoes are baking, dice the green onions, bacon, jalapeno, colorful hot peppers feta cheese and grate the cheddar cheese.Reserve 1/4 of the cheddar and 1/3 of the green onion for topping.
- Add the bacon in a medium-heat pan with 1tsp of oil and let it crisp upOnce the bacon is crispy add the green onion and jalapeno and fry them together for 1min then set aside.
- After the potatoes are baked take them out and let them cool off for 5-10min so that they're easier to handle.Cut out a scooping window about 2/3 up the potato and at a 45° angle. Then scoop out the potato flesh and combine it with all the ingredients in a bowl.
- Put the filling back in by gently pressing with a spoon in order to avoid air pockets and top with the reserved cheddar & place back in the oven, same temperature for 25min or until golden on top
- Once done, take them out, top with the reserved ingredients and enjoy!
