Kimchi Grilled Cheese Sandwich

This recipe takes one of the greatest sandwiches of all time and, dare I say it, makes it even better. I’m talking about the grilled cheese sandwich – I find that kimchi pairs so well with cheese that this combo seems like a match made in heaven.

Add to it the amazing kimchi mayo sauce and and the kimchi coleslaw on the side and I’m in kimchi heaven.

Kimchi Grilled Cheese Sandwich

What if we take Kimchi and stick it inside one of the greatest sandwiches of all time?

Cook Time 15 minutes

Ingredients

  • 60g (½ cup) Kimchi
  • 60g (½ cup) Red Cheddar
  • 60g (½ cup) Matured Yellow Cheddar
  • 1 tbsp mayo
  • 2 large slices of sourdough bread

Kimchi-Goghujang Dipping Sauce

  • 1 tbps mayo
  • 1 tbsp kimchi juice
  • ½ tbsp goghujang
  • 1 pinch MSG

Instructions

  • Start by fine-dicing the kimchi – this will make it easier for it to blend with the cheese
  • Grate the cheeses using a box-grater, mix them together and divide the cheese into two equal piles
  • Using a pastry brush or a knife, spread 1tbsp of mayo over one side of the slices of bread.
  • At this point you're ready to grill your cheese sandwich so it's a good time to skip below to the instructions of the dipping sauce. Move to next step once your dipping situation as been resolved.
  • To toast the sandwich, use a heavy-bottomed non-stick pan. Start it with the flame on medium-high and place the slices of bread with inside part first.
  • After 30 seconds drop the heat down to low and flip one of the slices, to that add one of the two piles of grated cheese and spread it evenly over the surface of the bread
  • then spread over the cheese the finally diced kimchi and top with the remaining cheese and place the other slice of bread over it – with the mayo-side up
  • let it sit like this for 1 minute and then flip the whole sandwich
  • continue to move and lightly press the sandwich so that it gets an even toasting, you can even flip it once every few minutes to control the temperature. Look for the cheese to be melted well before pulling it out. Have patience at it can take as a bit of time – for me it takes around 9-10minutes in total from when the bread hits the pan first.

Kimchi-Goghujang Dipping Sauce

  • Add all the ingredients in a small bowl and mix them until well combined
  • Check the consistency and adjust it by adding more kimchi juice if it's too thick.
