Even if you cook the rice from scratch you’ll still have this dish done in 25 minutes if you use my method.
Today we’re cooking a simple, quick and delicious Teriyaki Salmon using the homemade teriyaki sauce made last time. Placed on a bed of jasmine rice and topped with the most vibrant, spicy and zesty mango Pico de Gallo. It also has avocado, jalapeno and a healthy squeeze of lime.
This is a dish I cook very often if I’m feeling lazy but in the mood for something healthy and delicious, works wonders with any kind of fish or even chicken.
Teriyaki Salmon & Mango Salsa
Ingredients
Mango Pico de Gallo
- ½ medium-sized mango try to find a riper one
- 100 grams avocado half of a medium-sized one
- 100 grams cherry tomatoes
- 60 grams white or red onion I usually prefer red
- ½ of a jalapeno pepper deseeded
- 1tsp lime juice adjust to taste
- 4g (1/2 tsp) salt
Teriyaki Salmon
- 300g (11 oz.) salmon fillet split in two pieces
- 1 tbsp corn starch
- 200ml (7 oz.) teriyaki sauce recipe for homemade is below
- 1 tbsp fryin oil peanut
For Plating
- 150g (¾ cup) cooked jasmine rice
- 1 tbsp toasted sesame seeds
Instructions
Mango Pico de Gallo
- Dice all the ingredients in small pieces and add them to a bowl
- Squeeze a cheek of lime juice (1tsp) and mix well, taste and adjust if you want more acidity to it
- Keep to the side until ready to serve, then add the salt and mix well
Teriyaki Salmon
- If you're starting with a wide fillet like me then cut it in two, you might struggle with the skin if your knife isn't sharp enough. Having thinner pieces of fish makes it easier to flip when frying it.Then remove the bones using a tweezer.
- Coat the fish with a thin layer of corn starch
- add 1tbsp of oil and Heat on medium-low heat a non-stick pan
- Fry the fish on all sides for a total of 2 minutesOnce fried take the fish out and remove the excess oil
- Add the teriyaki sauce, change heat to medium and let it cook until it start to bubble.
- Then add the fish and let the sauce cook down until it becomes a syrupy glaze, while that is happening keep spooning it on top of the fish, no need to turn the fish.
- To plate, add the cooked rice, place the fish on it and top with sesame seeds and then the mango Pico de Gallo
