Spicy Pork Sausage Stir-fry Noodles

These lightning-fast, mouth-watering fiery noodles inspired by Ethan Chlebowski are quick to make. All that’s needed are a few veggies and aromatics like garlic, ginger, bell pepper, and onion. For the protein I used two pork sausages.

Spicy Pork Sausage Noodles

Easy, lightning-fast & mouth-watering fiery pork sausage and bell pepper noodles

Ingredients

  • 125 grams Egg Noodles like the ones used for chow mein
  • 4 cloves garlic peeled
  • 1cm (20g) ginger
  • ½ large red bell pepper
  • ½ medium yellow onion
  • 1 (~150g) pork sausage experiment with different flavors

Wok Sauce

  • 15 grams soy sayce
  • 30 grams Chinese black vinegar
  • 10 grams sriracha optional
  • 20 grams hoisin sauce
  • 100 grams water
  • 5 grams corn starch

Instructions

  • Place the egg noodles in boiled water and let them sit until ready to add to the stir-fry. About 10 minutes
  • For the wok sauce, mix together the soy sauce, chinese black vinegar, hoisin sauce, sriracha, water, and corn starch.
  • Grate the garlic and ginger, and cut the red bell pepper and onion into thin strips.
  • Heat a wok on medium-high heat and add peanut oil.
  • Stir-fry the onions until soft, then add the garlic and ginger.
    Once the onions have some color, add the pork sausage and fry until golden and crispy.
  • Add the peppers and stir-fry them until they soften a bit and get some color, about 1 minute
  • Add the strained noodles and stir-fry for 1 minute.
  • Make a well in the middle of the wok and add the sauce. Stir for 1 minute until the sauce thickens and coats the noodles.
  • Serve hot and enjoy! You can customize the dish by using different vegetables and proteins based on what you have in your pantry at the time.
