Quick Lime Basil Pasta Salad

Lime-Basil Pasta Salad

A simple, healthy pasta salad that's done before the pasta boils

Ingredients

  • 220g (8 oz) pasta I like fusili
  • ½ medium bell pepper
  • ½ medium red onion
  • ½ avocado
  • 100g (3.5 oz) cherry tomatoes halved
  • ½ sprig parsley

Dressing

  • 20g (1 tbsp) mayo
  • 100g (5 tbsp) Greek yogurt
  • ¼ tsp garlic powder
  • ½ tsp dry basil
  • 1 tsp salt
  • ¼ lime juiced
  • 2 pinches MSG optional

Instructions

  • Start by placing a bot of water with salt to boil for the pasta
  • While waiting for the water to boil, prepare the vegetables:
    – cube the bell pepper
    – dice the red onion
    – dice the avocado
    – cut the cherry tomatoes in half
    – finely dice the parsley.
  • When the water starts to boil, add the fusilli pasta and overcook it by 3 more minutes then the package says
  • In a separate bowl, mix together the mayonnaise, Greek yogurt, garlic powder, dry basil, salt, lime juice, and the MSG.
  • Once the pasta is finished cooking, drain it and spread it out on a sheet pan to cool off quickly.
    Add the pasta over the prepared vegetables
    Pour the dressing over the pasta and vegetables, and mix well.
    Taste and adjust seasoning as needed.
