Lime-Basil Pasta Salad
Ingredients
- 220g (8 oz) pasta I like fusili
- ½ medium bell pepper
- ½ medium red onion
- ½ avocado
- 100g (3.5 oz) cherry tomatoes halved
- ½ sprig parsley
Dressing
- 20g (1 tbsp) mayo
- 100g (5 tbsp) Greek yogurt
- ¼ tsp garlic powder
- ½ tsp dry basil
- 1 tsp salt
- ¼ lime juiced
- 2 pinches MSG optional
Instructions
- Start by placing a bot of water with salt to boil for the pasta
- While waiting for the water to boil, prepare the vegetables: – cube the bell pepper– dice the red onion– dice the avocado– cut the cherry tomatoes in half– finely dice the parsley.
- When the water starts to boil, add the fusilli pasta and overcook it by 3 more minutes then the package says
- In a separate bowl, mix together the mayonnaise, Greek yogurt, garlic powder, dry basil, salt, lime juice, and the MSG.
- Once the pasta is finished cooking, drain it and spread it out on a sheet pan to cool off quickly.Add the pasta over the prepared vegetablesPour the dressing over the pasta and vegetables, and mix well.Taste and adjust seasoning as needed.
