Quick Grilled Egg Sandwich

Sometimes all you need is just a good grilled egg sandwich to keep you well feed and not waste too much time cooking at lunch. Coupled with a simple spinach salad it’s a good balance of healthy and delicious meal.

Grilled Egg Sandwich

a mix of cheese, egg and spiciy salami to save you from hunger

Ingredients

The Sandwich

  • 2 slices white bread
  • 2 medium eggs
  • 3 slices italian spianata salami
  • 15 g cheddar cheese thinly sliced
  • 1 tsp everything bagel seasoning
  • 1 tsp olive oil

Salad

  • 200g (2-3 cups) spinnach leaves
  • 100 g cherry tomatoes
  • 1 tsp olive oil
  • 1/2 tsp orange flavored olive oil optional
  • salt & pepper
  • 1 wedge lemon's juice

Instructions

Sandwich

  • Beat the eggs along with the bagel seasoning and then add salt & pepper to taste
  • Add the salami slices in the cold pan on low heat with the olive oil, let them become crispy then take out and set aside
  • Turn the heat on medium and then Lightly toast the slices of bread in the rendered oil. Once toasted, take them out and set aside
  • Place on one slices of bread the sliced cheddar and on the other the salami
  • In the pan check if there's still some oil left, you might need to add a bit more to help with the flipping, then add the beaten egg and let it cook for a few seconds
  • Place the slices of bread, cheese or salami side down, on top of the egg. Cook until the egg loosens from the pan and you can easily slide the egg and bread around.
  • Carefully flip the egg and bread by sliding a spatula underneath to support it. Gently fold in any egg that has spread outside the bread, then fold one slice of bread over the other to form a complete sandwich.
    Reduce the heat to low to keep the sandwich warm while you prepare the salad, flipping it occasionally to avoid over-toasting one side.

Salad

  • Wash well the cherry tomatoes, spinach leaves and tear away the stems
  • Tear the spinach leaves in smaller pieces directly in a bowl then cut the cherry tomatoes in 4 and place in the same bowl
  • Add the two olive oils, salt & squeeze lemon juice, mix it all and serve it next to the grilled egg that you just cut in a diagonal for enhanced flavor 😛
