Kimchi Pancakes (Kimchi-buchimgae)

A savory pancake packed with enough kimchi flavor to take you to kimchi heaven.

  • ½ medium onion
  • 120g () kimchi
  • 2 tbsp kimchi juice
  • ½ tsp salt
  • ¼ tsp MSG
  • ¼ tsp baking soda
  • 40 grams potato starch
  • 40 grams all-purpose flour
  • 50-100ml (¼-½ cup) water add more only if needed
  • 1 tbsp oil for frying


  • Dice the onion and then chop the kimchi in small pieces and place them in a bowl.
  • In that bowl add all the other ingredients except the water – mix them all together.
  • Now add 50ml of water and mix – if the batter isn't runny enough then add the other 50ml of water and mix.
  • To a heavy-bottomed non-stick pan add the oil and place it on medium heat, let it get to temperature for 1 minute.
  • Next, spoon in half of the batter and use the spoon to spread it out – this batter is a bit thicker so it won't spread much on it's own.
  • Let it cook on this side until a darker red ring of about 2cm/1inch forms around the edges of the pancake – this tells you that the pancake is ready to flip.
  • To flip, use a wide spatula and go under it to flip like a regular pancake.
  • Once flipped let it cook for 4-6minutes on this side, the goal is to get it crispy on the outside while keeping the interior soft.
  • Take it out, but it into 4 and garnish with some chopped chives.
