This Korean pancake is a savory deliciousness that you should know about. Kimchi-buchimgae also referred to as kimchi-jeon is traditional Korean dish that makes good use of kimchi. This dish is very common street food in Korea! I’m going to show you how simple it is to make this dish from
Kimchi Pancakes (Kimchi-buchimgae)
A savory pancake packed with enough kimchi flavor to take you to kimchi heaven.
Ingredients
- ½ medium onion
- 120g () kimchi
- 2 tbsp kimchi juice
- ½ tsp salt
- ¼ tsp MSG
- ¼ tsp baking soda
- 40 grams potato starch
- 40 grams all-purpose flour
- 50-100ml (¼-½ cup) water add more only if needed
- 1 tbsp oil for frying
Instructions
- Dice the onion and then chop the kimchi in small pieces and place them in a bowl.
- In that bowl add all the other ingredients except the water – mix them all together.
- Now add 50ml of water and mix – if the batter isn't runny enough then add the other 50ml of water and mix.
- To a heavy-bottomed non-stick pan add the oil and place it on medium heat, let it get to temperature for 1 minute.
- Next, spoon in half of the batter and use the spoon to spread it out – this batter is a bit thicker so it won't spread much on it's own.
- Let it cook on this side until a darker red ring of about 2cm/1inch forms around the edges of the pancake – this tells you that the pancake is ready to flip.
- To flip, use a wide spatula and go under it to flip like a regular pancake.
- Once flipped let it cook for 4-6minutes on this side, the goal is to get it crispy on the outside while keeping the interior soft.
- Take it out, but it into 4 and garnish with some chopped chives.
